Ingredients:
- 1 teaspoon of coloured peppercorns in grains
- 5 juniper seeds
- 5 grains of allspice
- 5 fresh bay leaves
- half a lemon, diced
- 1/3 glass of rapeseed oil
- 1 teaspoon of honey – liquid
- 8 salted herring a’la matias
Preparation:
Pour cold water on the herring and soak for 2 – 3 hours.
After this time, drain, dry and cut into pieces.
Put the grains of juniper, allspice and 1/2 pepper in a mortar and crush the grains to release the aroma.
Put the rest of the colored pepper into a bowl, the one crushed from the mortar as well, the diced lemon with the peel, – previously scrubbed, add the bay leaves and the mixed honey with oil.
Finally, add the herring and mix everything again.
Transfer the herring to a container and refrigerate for 24 hours.
